This chicken was a crowd-pleaser with it's sweet yet tangy kick. My family gobbled up the spicy mustard meets sweet maple syrup tangy goodness. This recipe is an adaptation of the one found floating around pinterest. I like my chicken (and everything for that matter) really saucy so I adapted the recipe to my liking, including doubling the wet ingredients, changing the rice vinegar to red wine vinegar, and adding bacon because, well I love bacon. The bacon isn't included in the nutritional facts as I figured not everyone would include it, so keep that in mind. I would love to hear any tweaks you make to this and I'm going to continue to play around with it and create variations!

Ingredients
- 1 cup sweet brown mustard
- ½ cup maple syrup
- 1 tbsp. red wine vinegar
- 6 chicken thighs
- Pre-cooked Real bacon pieces/crumbled bacon (amount to your preference)
Instructions
- Preheat oven to 450 degrees
- Spray a glass casserole dish (or your similar cooking preference) with non-stick cooking spray
- Place chicken thighs in casserole dish
- Mix mustard, syrup and red wine vinegar in a small bowl
- Pour mixture over chicken thighs, ensuring they are completely coated
- Cook chicken for 40 minutes or until cooked through (depending on your oven performance)
- Half-way through cooking, pull out of the oven and baste chicken with the sauce in the bottom of the dish and add bacon pieces
- Dish and serve with extra sauce spooned on top
- I doubled the sauce amounts as the first time I made this, it didn't seem like there was enough sauce to my liking. Note that I like a lot of sauce, so if you prefer it more dry, feel free to half the wet ingredients. Hope you enjoy!

Note: The cooking time is approximate and may need to be adjusted based on your oven performance. I recommend checking the chicken at about 20 minutes and monitor it from there.
