One of my friends made a version of this for me several years ago and it is now my go-to when I want something easy, moist and tasty! This chicken literally melts in your mouth! My entire family loves this recipe, and that's reallllly hard to do!

Ingredients
- 1 cup Low Fat Mayonnaise (or half mayonnaise, half greek yogurt for a healthier option)
- ½ cup grated Parmesan cheese + an additional ¼ cup for the top
- 1 tsp garlic powder or seasoning salt to taste
- 6-8 chicken thighs (1 large package)
Instructions
- Preheat oven to 375 degrees
- Spray or spread olive oil in the bottom of the glass dish (or use non-stick cooking spray)
- Mix the mayonnaise, ½ cup parmesan cheese, and garlic powder/seasoning salt
- Spread chicken thighs out in the bottom of the glass pan and spoon the mayonnaise mixture ensuring you cover all the chicken so that it stays moist
- Sprinkle the remaining parmesan cheese on top
- Cook the chicken for 40 minutes or until completely cooked through.
- Serve and enjoy!
